Shakshuka with White Beans
Makes 4 servings
Ingredients:
1 tbsp olive oil
1 medium red bell pepper, diced
1 yellow onion, diced
2 cloves garlic, minced
1 15oz can of white beans, drained and rinsed
1 28oz can crushed tomatoes
1 tsp thyme
1 tsp oregano
1 tsp paprika
(any other spices you love!)
Salt and pepper to taste
4 large eggs
Directions:
Saute onions, bell peppers, and garlic in olive oil in a large skillet over medium heat until softened (about 5 minutes).
Add crushed tomatoes and spices and stir to combine. Bring to a simmer, stirring occasionally for 5-7 minutes. Add a pinch of salt and pepper to taste, if necessary.
Add white beans, stir, and continue to simmer for 2-3 minutes more.
Use a spoon or spatula to make four wells in the sauce and crack an egg into each well. Cover the skillet and let simmer until the egg whites are completely set (around 5 minutes).
Serve with sliced bread of your choosing and enjoy!
