Crock Pot Meal

Ingredients:

1 1/2 cups vegetable broth
1 can chick peas
6 oz. can tomato paste
32 oz. can diced tomatoes
1 zucchini, diced
1 cup carrot, chopped
1 cup red or orange pepper, diced
1 cup onion, chopped
3-4 cloves garlic, diced
1 tbsp. olive oil
1 lb. boneless chicken thighs
1 tsp. cinnamon
1/4 tsp. ginger
1 tsp. rosemary
1 tsp. oregano
salt and pepper to taste

Directions:

Put olive oil and then chicken in a crock pot. Add the vegetables, spices and broth and and cook on high for 4 hours or low for 8 hours. Serve warm over pasta, mashed potatoes or polenta.
