Mediterranean Chicken
Ingredients:
1 pound chicken
1/2 yellow bell pepper, diced
1/2 red bell pepper, diced
4-5 sliced mushrooms
1 jalapeno, diced
4 jarred artichokes, diced
1/4 cup yellow onion, diced
1/4 cup red onion, diced
4 garlic cloves, sliced thinly
2 tbsp. olive oil
2 tbsp. red wine vinegar
1 container cannellini beans, drained
1 can diced tomatoes
oregano, parsley, salt and pepper to taste
1 container feta cheese
optional- 1 box cooked pasta
Instructions:
Heat 1 tbsp olive oil in a cast iron pan and cook chicken until browned. Meanwhile, place the vegetables and spices in a casserole dish. Once chicken is browned, cut into small pieces and add to the casserole dish. Mix well and top with feta. Cook at 350 for 30 minutes. Serve over pasta or whatever you choose.
