Sweet Potato Lasagna
Ingredients:
1 large sweet potato, diced
1 can pumpkin puree
2-3 tbsp smart balance butter (or whatever butter you use)
1 cup ricotta cheese
1/2 container cream cheese
8 oz. goat cheese
1 egg
1/4 cup crushed walnuts,
1/4 cup pumpkin seeds
1/4 cup craisins
2 tbsp. honey
Fresh rosemary, thyme and sage
Salt and pepper
1 tbsp. Nutritional Yeast
Instructions
Boil sweet potatoes until softened. Meanwhile mix all the cheeses together and add 1 egg. Once the potatoes are softened, drain the water and mash them. Mix in the butter, nutritional yeast and desired amount of salt and pepper. Coat a casserole dish with half of the mashed potatoes. Top with 1/2 of the cheese mixture and 1/3 of the rosemary, thyme and sage. Nex,t put a layer of pumpkin. Add the remainder of the cheese, more rosemary, thyme and sag then layer on the remainder of mashed potatoes. Top with walnuts, pumpkin seeds, craisins and honey. Bake at 350 for 20 minutes. ENJOY!
