Teff Energy Bars

Teff is a versatile, nutrient-rich grain that can be found in most grocery stores.

INGREDIENTS

  • 2 c dates, pitted

  • 2 TBS honey or maple syrup

  • 3 TBS nut butter

  • 4 TBS coconut oil

  • 1/2 tsp salt

  • 1 c teff

  • 1/2 c hemp seeds

  • 1/4 c Craisins

  • 1/2 c dark chocolate chips

  • 1 c pumpkin seeds or walnuts

DIRECTIONS

  1. Preheat oven to 325 degrees F and line a casserole dish with parchment paper. The dish should be a size close to 8 x 11.

  2. Combine dates, honey, nut butter, coconut oil, and salt in a food processor until smooth.

  3. Add teff and pulse until combined.

  4. Add flour and hemp seeds and pulse again until combined.

  5. Transfer the mixture to a bowl and combine with all the remaining ingredients.

  6. Move your mixture to your baking dish and flatten it out (firmly so it is compressed) evenly across the dish.

  7. Bake for 25 minutes and let it cool for an hour.

  8. After cooling evenly, cut between 12 and 24 pieces.
