Harvest Chicken Stew

Ingredients:

1 lb. chicken thighs

2 tbsp. butter of your choice, I use smart balance

2 tbsp. olive oil

1 cup zucchini, diced

1 cup summer squash, diced

1 cup eggplant, peeled and diced

4-5 button mushrooms, sliced 

1/2 cup onion, diced

4 cloves garlic, diced

1 can diced tomatoes

1/4 cup tomato sauce

1 can cannellini beans, drained and rinsed

1 cup chicken broth

1/4 cup red wine vinegar

Salt, pepper, rosemary, oregano, parsley to taste

Instructions

Melt the butter in a cast iron pan.  Brown the chicken on both sides.  Remove the chicken from the pan and add the diced vegetables.   Add  the spices and simmer until softened.  Add the tomatoes, sauce, beans, broth and vinegar.  Heat through and add the chicken.  Simmer for 15 minutes.  Serve over pasta, rice or mashed potatoes.
