Black Bean Burgers
Ingredients:
1 can black beans, drained and rinsed
1 tbsp olive oil
1/4 cup bell pepper, diced
1/4 cup carrot, diced
1/4 cup red onion, diced
1 tbsp. chia, hemp, flax mix or just do a tsp of each
2 tsp. nutritional yeast
1 egg
1/2 cup bread crumbs
salt, pepper, chili powder, garlic powder to taste
Instructions:
Head the olive oil in a pan. Add the pepper, carrot, red onion and cook until softened. Smash the black beans with a potato masher. Mix in the vegetables, seeds, nutritional yeast, egg, bread crumbs and spices. Form into desired burger size and grill until browned on both sides.
We topped ours with guacamole and tomato but use whatever you like! You can use cheese but just know the iron from the beans and seeds won't be absorbed as optimally. I know, I know. I'm just the messenger!
