Lemon Garlic Cod

Ingredients:

1 pound cod

2 tbsp. olive oil

2 tbsp. smart balance butter

2 cloves garlic, sliced

1/2 cup yellow onion, diced

1 can petite diced tomatoes

1/4 cup white wine

juice of 1 lemon

1/4 cup fresh chopped cilantro

1/4 cup capers

Salt and pepper to taste.  

Instructions:

Heat the oil and melt the butter in a large pan.  I used my cast iron pan.  Add onions and cook until softened and transparent.  Add the cod and cook on both sides.  Add tomatoes, wine and garlic and cook for 5 minutes.  Add capers, lemon and cilantro.
