Sunday Night Supper
Ingredients:
1 lb chicken thighs
1/2 lb chicken breasts
2-3 tbsp. olive oil
4 mushrooms, sliced
1/4 cup red onion, diced
3 cloves garlic, sliced
4 cherry peppers, sliced
14 oz. can tomato sauce
1/4 cup red wine
1/4 cup chicken broth
salt, pepper, oregano, parsley, thyme, rosemary
Instructions:
Heat half of the olive oil in a large cast iron pan. Coat the chicken in salt and pepper and cook in the pan on both sides until browned. Remove the chicken from the pan and add the remaining oil. Cook the vegetables until softened, adding the seasoning while cooking, and add the chicken back in. Add the tomato sauce, red wine and broth. Simmer for 10- 15 minutes. Serve with desired sides.
